Gingerbread Energy Balls

Yummy, yummy, yummy, I’ve got gingerbread energy balls in my tummy…. As the old song goes. It’s getting all festive here at IP HQ so I wanted to create a little snack to get us in the Christmas spirit. However, I still wanted something healthy and fibrous before the baked goods of the season get the best of me. These gingerbread energy balls are sweet, spicy and delicious! They’re vegan, refined sugar free and full of fibre (and only 90 calories!).

Ingredients

  • 1/4 cup oats gluten-free
  • ½ cup ground almonds
  • 14 Sayer dates approx. 50 grams
  • 1/3 cup raisins
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ground ginger
  • pinch of salt

Instructions

  • Add all ingredients to food processor.
  • Blitz for 2 minutes or until mixture has just combined to one dough-like ball.
  • Roll into 8 balls. Roll balls in a mixture of equal parts cinnamon, ground ginger, nutmeg and coconut sugar, if you fancy.
