Winter Vegetable Soup


  • 1 medium white onion
  • 2 cloves garlic minced
  • 4 carrots
  • 2 large potatoes
  • 1 whole swede
  • 2 parnsips
  • 2 tbsp olive oil extra virgin
  • 200 ml oat milk
  • 850 ml vegetable stock
  • salt & pepper to taste


  • Peel and chop all vegetables. Place a large saucepan over a medium heat and add the olive oil.
  • Fry the onion and garlic off for 5 minutes or until translucent. Add all other vegetables and allow to cook for 10-15 minutes. 
  • Add vegetable stock and stir through. Turn down the heat and cover the saucepan. Leave to cook for 15-20 or until the veg are soft.  
  • Remove from the heat and blend with a stick blender until chunky. If using a jug blender, allow to cool before blending (I have shattered more than one blender with soup that was too hot before!). Add oat milk and blend again until smooth. Add salt & pepper to taste. Enjoy!
